Commitment to Cultivation
Before harvesting, the tea bushes are covered with a black shade net for a certain period.
By limiting exposure to sunlight, the leaves develop a deeper green color, resulting in a more vibrant green liquor when brewed.
This process also prevents the natural umami components from converting into bitterness by sunlight, allowing the tea to retain a richer umami flavor.
